What you are creating here is a sweet french toast sandwich so factor in two slices of bread and 1 ½ bananas per person. The bananas will go deliciously gooey in the middle and the pecans could be supplemented with almonds for a milder flavour. Make sure you use free range eggs for the best tasting French toast and to keep your mother’s day breakfast cruelty free.
