THE FAIL-SAFE MOTHER’S DAY AMERICAN BLUEBERRY PANCAKES

A stack of American style pancakes are a guaranteed crowd pleaser and the perfect breakfast treat to share with the whole family on a mother’s day morning. Because they are more substantial than their European counterpart the French crepe, you can combine these hot-cakes with your favourite fruit to make an extra satisfying sweet breakfast option. We loved this BBC recipe for the breakfast classic which makes 10 pancakes. Serve with extra berries and lashings of golden syrup.

INDULGENT MOTHER’S DAY STUFFED FRENCH TOAST BY JAMIE OLIVER

French toast is a brilliant alternative to a savoury eggs dish and can be whipped up using ingredients you already have in the kitchen. Britain’s favourite daddy-chief Jamie Oliver has come up with this stuffed variation using bananas and pecan nuts. What you are creating here is a sweet french toast sandwich so factor in two slices of bread and 1 ½ bananas per person. The bananas will go deliciously gooey in the middle and the pecans could be supplemented with almonds for a milder flavour.  Make sure you use free range eggs for the best tasting French toast and to keep your mother’s day breakfast cruelty free.

HEALTHY MOTHER’S DAY BREAKFAST – APRICOT, CRANBERRY, PISTACHIO AND QUINOA PORRIDGE

VEGAN FRIENDLY – CINNAMON ROLLS FOR MOTHER’S DAY

Enjoy these vegan friendly cinnamon rolls for breakfast or with coffee later in the day. This recipe substitutes traditional ingredients with almond milk and egg replacer. Whilst these can’t really be classed as “healthy” they will be lower in cholesterol than a traditional butter and milk option, they are also a great choice for lactose intolerant families.

CHILD FRIENDLY COOKING – BAKED DIPPY EGGS

This recipe has been created especially for children between the ages of 3-6 and can easily be made with the supervision of an adult. All the delicious ingredients are piled into a small ramekin and then baked in the oven for just 15-20 minutes. Serve with buttery toasted bread and experiment with different veggie fillings such as sweet corn, peas, pepper and spring onions.
