In the Kitchen with Najwa Kronfel of Delicious Shots: Crème Brûlée Recipe

Mother and founder of beautiful blog Delicious Shots, Najwa Kronfel is a food photographer based in New York. Her blog is dedicated to inspiring people to cook with seasonal products and food from scratch as much as possible. She says “I’m a big lover of Farmers’ Markets. My endless love for food photography is also reflected in my blog as I let my camera tell the story behind every dish I create.”  We caught up with her to find out more and get her summery recipe for crème brûlée.

WHAT INSPIRED YOU TO START DELICIOUS SHOTS?
I started blogging while pregnant. I knew it was going to be a while before I returned to work. I really wanted a place where I could share my work and keep me cooking an baking. I found I huge satisfaction in blogging and the connection I have with people I never met before is amazing.

WHAT’S YOUR FIRST COOKING MEMORY?
I was 7 years old when I made pancakes from scratch for my brother and me. That was the first time I cooked something and since then, I fell in love with cooking.

HAVE YOU ALWAYS BEEN GOOD AT COOKING?
I’d like to think so. I’ve always put a lot of passion in what I cook, I can only hope that’s reflected in my food.

DO YOU COOK WITH YOUR SON OFTEN?
Yes, I do. Every time I can, I have him help me with little things like mixing something or adding an ingredient to the mix.

HOW DO YOU TEACH HIM ABOUT FOOD?
I always try to get him involved in what I’m doing. He seems to enjoy baking more than cooking, specially when it comes to bread. I would love for him to learn and appreciate food the same way I do.

WHAT SORT OF FOOD DO YOU LOVE TO EAT WITH YOUR FAMILY?
My Middle Eastern background is always reflected in my food. We eat things like freekeh, burghul, lentils, a lot of vegetables. We are not vegetarians but meat is something we don’t eat as often.

AND FINALLY, WHAT DO YOU THINK ARE THE BIGGEST FOOD TRENDS THIS YEAR?
Turkish cuisine, savory yogurts and ice creams.

Crème Brûlée Recipe

Najwa’s Crème Brûlée Recipe

Ingredients:
2 cups heavy cream
5 eggs yolks
1 vanilla pod, split and scraped
zest of one lemon
1/3 cup sugar plus more
for finishing

Preheat the oven to 300 F. Place the half of the sugar, heavy cream and vanilla pod in a saucepan and bring it to a boil. Meanwhile, combine the rest of the sugar, egg yolks and lemon zest in a mixing bowl and whisk until the mixture is pale yellow. Temper the hot cream in to the egg mixture, be careful not to scramble the eggs, do it slowly and whisking constantly, whisk until well combine.  Ladle into ramekins and place in a roasting pan, add enough boiling water to come halfway up the sides of the dishes. Bake for  Bake for 40 minutes or until the mixture is set, the center should still jiggles slightly when shaken. Let them come to room temperature then refrigerate them for a couple of hours. When ready to serve, Sprinkle the top with sugar and caramelize using a blowtorch. Top with fresh fruit and mint.
